Domaine Arsac was founded in 1945 when Gaston Arsac returned from wartime captivity and settled with his wife Thérèse at the Chaumette farm. Passionate about viticulture, he planted the first vineyard parcels on the hillsides despite the challenges, eventually producing his own wine. Sixty years later, his son Joël and grandsons Dimitri and Sébastien took over the estate and converted it to organic farming. They continue the traditional methods passed down by their grandfather: working the vineyards with horses, maintaining grass-covered soils, using compost from the estate’s organic livestock, applying herbal infusions, and carrying out pruning and harvests by hand. Their goal is to express the unique terroir of the volcanic Coiron plateau, characterized by clay-limestone and basalt soils that give the wines freshness, minerality, and aromatic complexity. The grapes are sorted in the vineyard and at the winery, fermented with native yeasts, then aged in concrete tanks, sandstone jars, or oak barrels. Their philosophy is based on respectful work with nature, guided by the rhythm of the seasons and intended to be passed on to future generations.
